Watermelon Mango Smoothie
Did you know that every part of a watermelon is edible? Not only is that true, but it's extremely healthy. I used to prepare the rinds of watermelon as a kimchi, trimming off the outer green rind not realizing the health benefits. (I'll post the recipe). Now I simply just juice the watermelon rinds, make a kimchi out of the leftover pulp which I dehydrate into crackers. (Yum!!!)
I developed this recipe by sheer accident. I had a bunch of watermelon which I wanted to make a smoothie out of. So I loaded it in my Vitamix, and felt I wanted something more. I had just prepared some vitamin water (2 lemons, and 1/2 orange sliced and infused in 1 quart of water). So I had 1/2 an orange left, which I peeled and threw into the Vitamix. But still I thought it needed more. I added 4-5 mint leaves, and viola there's a small mango looking at me on the counter. So I peeled it, sliced the fruit from the seed, and added that and blended.
What I didn't expect was the insane delicious flavor, and smooth texture this mixture produced.
The ingredients are based on estimates of what I used the morning I chanced upon this recipe.
- 5-8 cups of cubed Watermelon
- 3-5 fresh mint leaves
- 1 small ripe mango
- 1/2 Orange (Peeled and sliced)
Put everything into your Vitamix and blend until smooth. Chill what you don't drink. My mixture doesn't last more than 1-2 days because it's so yummy. Typically watermelon juice won't last long, so consume within a few days.
