Okay, this one is not on the healthy list. But, it's definitely on the delicious list! :) Perfect for Eggs Benedict, Asparagus, and all sorts of foods.
- 4 Egg Yolks
- 1 TB: Fresh Squeezed Lemon Juice
- 1/2 Cup: Butter
- Pinch of Cayenne
- Pinch of Sea Salt
Whisk everything together in a double-boiler, until it turns bright yellow, and thickens.
