Apple Cinnamon Energy Bar

These energy bars are better than any other energy bar on the market, and are RAW and Vegan. I survived an entire day at a water park, on just two of these. They're delicious, they give you great energy, and prevent you from getting hungry.

Makes 12 Bars

Ingredients

  • 1 Small Apple, cored
  • 1 cup Fresh or soaked dried dates
  • 1/2 cup soaked quinoa (until you see the stems\sprouts)
  • 1/4 cup Almonds (Soaked at least 2 hours)
  • 1/4 cup Ground Flaxseed (Buy whole, and ground yourself)
  • 1/4 cup Hemp Protein
  • 2 Tsp Cinnamon
  • 1/2 Tsp Ground Nutmeg
  • Sea Salt to taste (Which you might want to grind into a fine powder)



Directions

Combine all ingredients and process in a blender (Food Processor, or Ninja) until thick dough holds it's shape. Put on non-stick surface and shape into large square, then evenly cut into 12 bars. (Optionally you could roll these into balls) Next let air dry, or place in dehydrator set to 110 degrees farenheit until dry to touch. (Don't turn it to jerky, should be chewy)

If you prefer a smoother texture, blend the mixture until it's smooth. Or if you prefer it crunchier, blend it less. I typically wrap each individually in plastic wrap. Store in fridge, to keep for 2 weeks or in the freezer for 3 months. (Bars will not freeze, and can be eaten right out of the freezer)

Additional Notes: I typically use Medjool Dates, and don't bother soaking. When using Almonds, only use Raw Almonds, and soak them for 2-4 hours to remove the enzyme inhibitors (This makes them more readily digestable, and you get more of the nutrients.) Make sure you rinse them several times to clean off the inhibitors, then either air dry to dry in dehydrator at a low temp (Below 115 Degrees).

Planning ahead make this a sinch. I typically soak batches of various nuts, and have all ingredients on hand. So when I decide to make these, it takes about 10 minutes. And about 1-2 hours in a dehydrator drying.
